1/4 cup shredded, unsweetened coconutIn a small bowl, mix together milk and vinegar, let sit 5 minutes. Add the neat egg and mix well. In a mixing bowl with an electric mixer, combine milk mixture, vegan butter, sugar and vanilla until creamy.
In a separate bowl, mix together remaining dry ingredients. Gradually add the dry mix to the wet ingredients until well blended but do not over mix. Preheat oven to 350 and line a cupcake pan with 12 paper liners. Spoon the batter into the liners until they are 3/4 full. Bake 20-25 minutes, until a toothpick inserted in the center comes out clean.
1-2 drops pink or red food coloring, optional
Sprinkles, optionalWhip all ingredients except sprinkles together until smooth. Refrigerate for just a few minutes, if the frosting is too runny. Spread the frosting on each cupcake, top with sprinkles, and share with your sweetie!
