Last week we unveiled the winning dish – neat Mini Pastry Pies!

Let’s show some love to the next top 3 dishes (in no specific order).

Yield: 6 to 8 servings (as a snack)


  1. 1 pack of your favorite neat
  2. 2 tablespoons neat egg
  3. 6 tablespoons water
  4. Pinch of sea salt
  5. 2-3 tablespoons extra virgin olive oil
  6. Dusting of gluten free flour or regular flour


  1. Preheat oven to 375F.
  2. Mix neat, neat egg and water in a mixing bowl until well combined.
  3. Cut 2 pieces of parchment paper the size of your baking sheet plus about an inch of border.
  4. Using a spatula, spread neat as evenly as you can over 1 piece of parchment paper.
  5. Dust 2nd piece of parchment paper with some gluten free flour (or regular flour). Place parchment paper over neat mixture and using a rolling pin, roll out neat mixture as thin as you can. Keeping it within the margins of the size of your baking sheet.
  6. Gently remove the top parchment paper.
  7. Sprinkle sea salt and brush with olive oil.
  8. Place flattened neat (still on parchment paper) onto baking sheet and bake in oven for 20-25 minutes until golden and crispy.
  9. Once done, remove from oven, let cool before breaking it into dip-size pieces.
  10. Enjoy it with your favorite dip!


Neatest Stuffed Shells by Pam Correll

Serves 5

6 ounces jumbo shell pasta (1/2 box)
1 (5.5 ounce) package neat Italian Mix
2 tablespoons neat Egg
6 tablespoons water
2 tablespoons olive oil
¼ cup chopped onion
1 cup cottage cheese
½ cup Parmesan cheese
24 ounces marinara sauce
2 cups shredded mozzarella cheese

Preheat oven to 350 F.

Boil jumbo shells according to package directions.

While pasta is cooking, stir together Italian Mix neat and neat Egg in a medium sized bowl. Add water and mix well. In a large skillet, heat olive oil over medium heat. Add neat mixture and chopped onion. Cook over medium heat 7 minutes, stirring frequently with a wooden spoon to make it crumbly. Remove from heat. Stir in cottage cheese and Parmesan cheese.

Pour 1 cup marinara sauce in the bottom of a 13 X 9 baking pan. Using a spoon, fill each shell with Neat mixture. Place on top of sauce in pan. Pour remaining sauce over filled shells. Top with shredded mozzarella cheese.

Bake 25 minutes in preheated oven.


Neat Taco Stuffed Peppers by Kristen Heigl


Serves 6

6 red bell peppers, tops removed, seeded
1 pack neat Original Mix, prepared according to package directions
2 tablespoons olive oil
1 onion, diced
1 yellow pepper, diced
1 cup mild salsa
1 (6 ounce) can tomato paste
1 can (15 ounces) black beans
1/2 cup can corn
1/4 cup sour cream
1 neat egg, prepared according to package directions
salt and pepper to taste
1 tablespoon taco seasoning
1 teaspoon ground cumin
1 cup quinoa, prepared
3/4 cup cheddar cheese, shredded

Preheat oven to 350 degrees and place peppers upright into a baking dish.

Brown the neat mixture in large pan, add the olive oil, onion, yellow pepper and cook until the onions are translucent. Add the salsa, tomato paste, black beans, corn and cook for about 3 minutes until mixture is thick and combined. Stir in the sour cream, cheddar cheese, Neat egg, salt, pepper, taco seasoning, quinoa and cumin. Cook for 5 minutes. Stuff the green peppers with the skillet mixture. Bake peppers for 20 minutes. Remove from oven and top with cheddar cheese. Bake for about another 15 minutes or until the peppers are tender.

Neat Recipe – Neat Breakfast Cups

Makes 8-10 cups

  • 1 c. broccoli florets
  • 1/3 c. diced shallots
  • 1 c. grated sweet potato
  • 1 package neat breakfast
  • 1 ½ c. cooked quinoa
  • 1 egg or 1 neat egg
  • 1 T. olive oil
  • ¼ c. grated cheddar cheese or favorite vegan cheese


  1. Preheat oven to 350.
  2. Saute together the broccoli florets, diced shallots and grated sweet potato in 1 T. olive oil. Season with salt and pepper.
  3. Prepare the neat Breakfast according to the package.
  4. Mix the sauted vegetables and sauted neat Breakfast mix with the 1 ½ c. cooked quinoa, the additional egg or neat egg and the 1 T. olive oil. Mix thoroughly.
  5. Spoon into greased muffin cups* and press down with oiled fingers or the back of a spoon. Top with cheese and bake at 350 for 20 minutes until lightly golden brown.
  6. Allow to cool in the muffin tin for 10-15 minutes and then gently lift out.

*even easier to remove if you have silicone muffin cups!

Neat Recipe – Neat Breakfast Spanakopita

Neat Breakfast Spanokopita 3

(makes about 25 triangles or 1 pie)


  • 1 package Neat Breakfast
  • 2 tbs Neat Egg
  • 2 tbs olive oil, divided + extra for brushing
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 10oz package frozen chopped spinach
  • 3 tbs nutritional yeast (adds cheesy flavor)
  • 2 tbs chopped parsley
  • salt and pepper to taste
  • phyllo pastry sheets


  1. In a small bowl, stir together Neat Egg and 1/4 cup water. Add package of Neat Breakfast and 2 tbs of water and stir everything together.
  2. Heat 1 tbs olive oil in pan at medium heat. Crumble Neat mixture into pan, stirring occasional until Neat becomes crispy (about 10 minutes).
  3. Transfer Neat to bowl and set aside. Turn heat to medium-high and add 1 tbs olive oil to pan. Add onion and garlic and saute until lightly brown (about 7 minutes).
  4. Turn heat down to medium. Add spinach and cook until spinach is heated and excess water evaporates (about 5 minutes). Stir in nutritional yeast, parsley, salt and pepper. Transfer mixture to bowl and set aside.
  5. To prepare triangles or pie, preheat oven to 375°.
  6. If preparing pie, grease a 9″ x 9″ baking dish with olive oil. Cut pastry sheets to 9″ x 9″. Place a pastry sheet on the bottom of the dish. Brush oil over sheet, then add another layer. Repeat until you have 6 layers. Add Neat and spinach mixture and spread evenly over pastry sheets. Top with 6 more pastry sheets, brushing oil between each layer. Bake for 30-40 minutes, until golden brown.
  7. If preparing triangles, grease a baking sheet with olive oil. Slice pastry sheets into strips about 2″ wide.* Place a strip on a cutting board or clean surface. Brush oil over it then layer another strip on top. Brush oil over the second layer. Place a heaping tablespoon of Neat and spinach mixture onto end of strip. Fold one corner of strip over to meet the other, forming a triangle. Fold the opposite end over, repeating through the strip until triangle-shaped pastry is formed. Place on baking sheet. Repeat until all mixture is used. Bake for 20-25 minutes, until triangles are golden brown.

*Make sure to cover the phyllo dough you aren’t using so it doesn’t dry out as you work.

Neat Recipe – Breakfast Sandwich with Maple Butter (Vegan, Gluten-Free)

Neat Breakfast English Muffin Sandwich 2

English Muffin Breakfast Sandwich with Maple Butter (Vegan, Gluten-Free)


2 Neat Eggs
1/2 cup water, divided
1 package neat Breakfast Mix
oil or non-stick spray
4 english muffins, toasted (we used this gluten-free kind)
4 slices vegan cheddar cheese (we used Daiya)
2 tbs vegan butter, softened  (we used Earth Balance)
2 tbs maple syrup


In a small bowl, mix together neat Eggs and 1/4 cup water. Add package of neat Breakfast Mix and remaining 1/4 cup water and stir.

Heat oil or non-stick spray in large pan on stove at medium heat. Use your hands to form mixture into patties and fry patties for 3-4 minutes on each side.

Add cheese slices to patties in pan and let sit 1-2 minutes, until cheese melts.

Prepare maple butter by stirring vegan butter and maple syrup together. Spread on both sides of english muffins. Add patties to make sandwiches and enjoy warm.
