Neat Recipe – Neat Italian Stromboli

Vegetarian ~ Vegan (if vegan cheese is used) ~ Quick and Easy

Ingredients:

1 pack neat Italian, cooked into crumbles, according to package instructions
1 jar pizza sauce, we used Muir Glen organic pizza sauce

Shredded mozzarella cheese, or vegan substitute

Pizza dough:

Combine the following 3 ingredients, let sit 10 minutes:
1 package active dry yeast
1 teaspoon white sugar
1 cup warm water
Then add:
2 1/2 cups bread flour
2 tablespoons olive oil
2 teaspoons salt

Knead 2 minutes, then let rest 5 minutes.  Roll dough into a 1/4″ thick circle

Preheat oven to 450.  To assemble the Stromboli, place pizza dough circle on a pizza pan or cookie sheet.  Spoon 1/3-1/2 cup pizza sauce only on half of the circle.  Top the pizza sauce with the cooked neat crumbles.  Then top with the mozzarella.  Fold the other half of the circle over top of the sauce/neat/cheese side, forming a semi-circle.  Seal the dough together around the edges by pressing a fork into both layers of dough.

Top the unbaked stromboli with the following (optional):

Olive oil, brushed on top
Parmesan cheese, or vegan substitute
Dried basil

Garlic salt

Bake in a 450 oven for 16-20 minutes until golden brown.  Let cool 5 minutes, then slice with a pizza cutter and enjoy!

Neat Recipe – Will You Be My Vegan Valentine Cupcakes

Egg-free Coconut Cupcakes!   Vegan ~ Egg Free
Ingredients:
1 cup + 2 tablespoons coconut milk
1 tablespoon neat egg
1 teaspoon vinegar
1/2 cup vegan butter, softened
1 cup granulated sugar
1 teaspoon vanilla
1 1/2 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoon baking powder
1/4 cup shredded, unsweetened coconutIn a small bowl, mix together milk and vinegar, let sit 5 minutes. Add the neat egg and mix well. In a mixing bowl with an electric mixer, combine milk mixture, vegan butter, sugar and vanilla until creamy.

In a separate bowl, mix together remaining dry ingredients. Gradually add the dry mix to the wet ingredients until well blended but do not over mix. Preheat oven to 350 and line a cupcake pan with 12 paper liners. Spoon the batter into the liners until they are 3/4 full.  Bake 20-25 minutes, until a toothpick inserted in the center comes out clean.

Coconut Frosting:
1/2 cup unsweetened, shredded coconut
3 Tablespoons canned coconut cream
3 Tablespoons coconut oil, melted
3 Tablespoons vegan butter, melted
1 teaspoon vanilla
2 cups powdered sugar

1-2 drops pink or red food coloring, optional

Sprinkles, optionalWhip all ingredients except sprinkles together until smooth.  Refrigerate for just a few minutes, if the frosting is too runny.  Spread the frosting on each cupcake, top with sprinkles, and share with your sweetie!

Serve with a cup of Kaffree Roma, a caffeine-free coffee alternative made with all-natural ingredients!

Neat Burger Bites

 Vegetarian or Vegan (use vegan cheese) ~ Quick & Easy
 
1 pack neat Original, prepare crumbles according to package directions
2 packs frozen mini fillo shells, thawed (we used Athens brand) 
1 small jar bread and butter pickles
5 slices cheddar cheese or vegan cheddar cheese, cut into 1 inch squares
ketchup
mustard
 
Fill the fillo shells with the cooked neat crumbles, top with a square of cheese, a pickle, ketchup, and mustard.
Serve on a platter and watch them disappear!

Neat BBQ neat & Sweet Potato Fries

Vegan ~ Gluten Free ~ Quick & Easy
1 pack neat Mexican, prepare crumbles according to package directions
1 bag frozen sweet potato fries, cook according to package directions.
1/3 cup your favorite BBQ sauce
 
Pour the BBQ sauce over the cooked neat crumbles; toss to coat the crumbles.  When the fries are fresh out of the oven, top them with the BBQ neat.  Drizzle extra BBQ sauce over the fries, serve them up, and enjoy!
